Bacteriological Quality Assessment of Ready-To-Eat Hawked Suya in Dutse Urban, Northwest Nigeria

Suya is a street-hawked food that offers source of the nourishing menu for its consumers. In this study, quality and safety street hawked ready-to-eat suya in Dutse urban was assessed. Twenty skewers were sampled from four sampling points (Hakimi Street, Yelwawa, Takuradua Mobile base) where it mostly sold. At each point, five obtained randomly vendors sterile containers labeled A to T. Samples immediately taken laboratory standard methods employed bacteriological assay. The total viable count (TVC) showed sample G (1.96 × 107 CFU/g) collected Yelwawa had highest load while P (8.60 106 recorded lowest. Bacillus spp., Staphylococcus Escherichia coli Streptococcus spp. detected samples. Across points, percentage occurrence bacteria isolated (40%) least (10%). It can be concluded all assayed study contaminants. Some samples potentially constitute public health issue as their presence cause poisoning food-borne diseases. Therefore, recommended producers vended should follow proper measures during preparation improve well reduce imminent crisis upon consumption. Stamford Journal Microbiology, Vol.12 (1) 2022: 25-30
